Sweet Potato Toasts
I've had a little food boredom lately so decided to give some sweet potato toast a try. I was half expecting to be disappointed but they were actually really good and simple.
Ingredients:
1 Sweet Potato
1/2 Banana
1/4 Cup Blue Berries
1 TBS Unsweetened Sunbutter
1 TBS Nutbutter Blend with chia and flax seeds
1 Radish sliced thin
Squeeze of lime juice
1/2 Avocado
Pinch of Unsweetned Coconut Flakes
Pinch of Hot Seeds
Pinch of Cinnamon
1 Slice of Bacon
TBS of pecans
Avocado, Olive, or Coconut Oil to brush the sweet potato
How to Prepare:
Pre-heat the oven to 400
Peel and cut the sweet potato into slices the long way. I used a big fat sweet potato.
Brush each side with a small amount of oil so it doesn't come out dry brown and weird in the oven.
Cook for about 20 minutes until tender.
Prep your bacon and pan fry it cut up and diced til crispy.
Prep your other ingredients and set aside.

Top with
Sunbutter
Blueberries
Sprinkle of coconut
Sprinkle of cinnamon
Banana Slice:
Top with
Mixed nut butter
Sliced Banana
Pecans
Bacon slices cooked
Avocado Slice:
Top with
Mashed avocado
Hot seeds
Splash of fresh lime
Sliced Radishes
